General note: these are my personal recipes, tinkered with by trial and error after nabbing them from family (typically Mom), friends, cookbooks or the internet. Please be aware that the current collection of “Chinese” recipes I’ll be posting are, in effect, American Chinese recipes…dishes that I frequently cooked back in the states…long before I came to China.

When I get around to adding “true” Chinese recipes, I will categorize them appropriately…with just one caveat: I do tend to dabble a bit with ingredients.
